Don't forget about the partial benefit formula if you're working part time while collecting. It gets complicated with the earnings deduction but basically you can earn up to $504 per week before it affects your unemployment completely. The NYS Department of Labor deducts 25% of anything you earn over $100 from your weekly benefit.
The whole system is a joke anyway. They make it impossible to understand on purpose so people give up and don't claim what they're owed. I've been fighting with NYS Department of Labor for months over my benefit rate calculation and nobody can give me a straight answer.
Since you mentioned your claim is in adjudication - that's completely separate from EUC or any extended benefits. Adjudication is just NYS Department of Labor reviewing your initial claim to make sure you qualify. It can take a few weeks but has nothing to do with extensions. Focus on that first before worrying about what happens after your 26 weeks.
Good point, I'm probably getting ahead of myself. The adjudication is taking forever though - it's been 3 weeks already with no updates.
If you're having trouble getting through to NYS Department of Labor about your adjudication status, I had luck using a service called Claimyr (claimyr.com) that helped me get connected to an actual agent. They have a demo video at https://youtu.be/qyftW-mnTNI showing how it works. Saved me hours of trying to call.
The system is so messed up honestly. They make it nearly impossible to qualify for anything and then when you do qualify they drag their feet processing everything. I've been waiting 6 weeks just for them to review my job search logs!!
Just want to add that you need to be really careful about how you describe your reason for quitting on the application. Use terms like 'constructive dismissal' or 'unsafe working conditions' rather than just saying you were unhappy. The specific language matters for NYS Department of Labor adjudication.
The whole system is set up to confuse people! They make you jump through hoops and half the time different offices give you different answers. I spent months trying to sort out benefit conflicts after my accident and nobody could give me a straight answer about what I was allowed to collect.

Make sure the verification letter is recent - some landlords want it dated within 30 days. Also keep in mind it will show your gross weekly benefit amount before taxes, so budget accordingly if you're using this for rent calculations.

Wait I'm confused - are we talking about a letter TO unemployment or FROM unemployment?? I thought this was about writing to NYS Department of Labor about something but now everyone's talking about getting letters from them??

•The OP needs a letter FROM NYS Department of Labor proving they receive benefits. It's for their landlord, not something they send to the unemployment office.
