One more thing - if you have a lawyer or legal aid helping with your appeal, the process sometimes moves a bit faster. Not always, but Washington ESD seems to respond quicker to attorney correspondence.
Just remember that even if the appeal takes a long time, if you win you'll get paid for all those weeks you were waiting. Keep track of everything and stay patient.
Last tip - screenshot or print your confirmation after filing. Washington ESD's system sometimes loses applications and you'll need proof that you filed on time.
To summarize for OP: Wait until your last day of work, file immediately after, keep all documentation, file weekly claims religiously, and be prepared for the waiting week. You've got this!
Thanks everyone for all this information. I feel much more confident about applying for unemployment now. It sounds like as long as I'm honest about my situation and capabilities, I should be okay applying for both.
Just to add one more perspective - I know someone who didn't apply for unemployment while waiting for disability and really struggled financially. If you qualify for unemployment, you should apply. Don't suffer unnecessarily while waiting for disability approval.
One more thing about getting help from Washington ESD - if you do need to call them, that Claimyr service I mentioned earlier really does work. I was skeptical at first but it saved me so much time and frustration. They basically handle all the calling and waiting for you.
Bottom line - your benefit amount is based on your earnings history, not your most recent job. Washington ESD has a formula they use and there's a maximum cap. File as soon as you can and don't stress too much about the exact amount until you know for sure.

The waiting is definitely the hardest part especially when you have bills due. But in my experience Washington ESD is pretty reliable once everything is set up correctly.

One last thing - if you end up needing to contact Washington ESD about payment issues, try calling right when they open at 8am or during lunch time around noon. Those seem to be the best times to actually get through.

•Or just use Claimyr and skip the hassle of trying to time your calls perfectly. Much less stressful.
